Vanilla slice
Vanilla slice sits in our dessert collection for puddings after roast night, birthdays, and bring-a-plate invites. We keep the voice practical — what to buy, what heat to use, and how to tell when it is done. Plan on Overnight chill recommended from starting prep to plating for 8. Prep is about 6 hr 30 min (mostly chilling); the active cook or oven time is closer to 35 min. Read the whole method once before you turn on the heat. The character of the dish comes from sheets frozen puff pastry, milk and vanilla bean. Check quantities in grams where listed — volume is fine for many liquids, but baking and batter ratios behave better on scales. Good for puddings after roast night, birthdays, and bring-a-plate invites. Portion generously; leftovers keep if covered in the fridge. Keep Australian cup measures (250 ml) so the ratios match what we tested on the page. Everything on this page is metric-first for Australia. If you are converting from cups on an old card, weigh flour, sugar, and butter whenever the ingredient line shows grams.
Ingredients
Method
- Heat oven to 210°C (190°C fan). Bake each pastry sheet between two trays 8–10 minutes until deep golden and flat. Cool. Trim to fit a 23 cm square tin.
- Warm milk with vanilla. Whisk cornflour, custard powder and sugar in a saucepan, then whisk in cream. Add warm milk.
- Cook, stirring, until very thick. Take off the heat, beat in butter then yolks.
- Line the tin with one pastry sheet. Spread custard. Top with second pastry. Refrigerate overnight until firm.
- Dust with icing sugar. Cut with a serrated knife (wipe between cuts).
Tip: Overnight chill is what lets you cut clean squares. Bake pastry well so it stays crisp against the custard. Full-fat cream only.
Notes
- From our tested tip, expanded: Overnight chill is what lets you cut clean squares. Bake pastry well so it stays crisp against the custard. Full-fat cream only. Treat that as the non-negotiable. If something still feels off — too wet, too pale, too tight — adjust one variable at a time (heat, liquid, or bake time) rather than changing three things at once.
- Serving ideas without fluff: serve warm or chilled depending on the style. Keep accompaniments simple so the dish stays the hero — a green salad, steamed veg, rice, mash, or crusty bread depending on the style. Metric measures stay consistent across Scoops & Dishes, so once you trust the cups and scales here, the rest of the site cooks the same way.
- Dessert notes: sweetness should taste balanced, not sugary-sharp. If you are adding cream or fruit, whip cream only to soft peaks so it spreads without splitting. Chill or rest when the method asks — structure sets in the fridge more than on the bench. Serve Vanilla slice at the temperature the recipe implies (warm pudding vs cold slice).
- Putting it together for Vanilla slice: work clean, taste as you go, and do not rush browning or reduction steps if they appear in the method. If you are cooking for mixed diets, plate sauces and toppings separately where practical. Keep this page bookmarked if it becomes a household regular — we update wording when cooks report a confusing step. Metric consistency across Scoops & Dishes means once you trust the cups and scales here, breakfast through dessert behaves the same way.
