Carrot cake

Serves 12 Prep 30 min Cook 35 min Total 1 hr 5 min (plus cooling)

Here is our working carrot cake for Scoops & Dishes: no doorway fluff, just a cookable page with Australian metric detail and notes that prevent the usual failures. Plan on 1 hr 5 min (plus cooling) from starting prep to plating for 12. Prep is about 30 min; the active cook or oven time is closer to 35 min. Read the whole method once before you turn on the heat. The character of the dish comes from can crushed pineapple, milk and white vinegar. Check quantities in grams where listed — volume is fine for many liquids, but baking and batter ratios behave better on scales. Use it for weekend baking sessions and school-lunch tin fillers, then cool on a rack, then slice or pack once firm. One tray or tin as written — freeze extras in airtight bags. Metric spoons here mean a 20 ml tablespoon and a 5 ml teaspoon. Method opens with: “Heat oven to 180°C. Grease and line two 20–22.5 cm round pans, or one 22 × 33 cm pan.”. Follow the order as written; jumping ahead is how pans crowd and sauces split.

Ingredients

Method

  1. Heat oven to 180°C. Grease and line two 20–22.5 cm round pans, or one 22 × 33 cm pan.
  2. Mix milk and vinegar; stand 5 minutes. Whisk with eggs, brown sugar, oil, pineapple and juice.
  3. Whisk flour, bicarb, salt and cinnamon. Fold into wet mix. Fold in carrot, coconut and walnuts.
  4. Bake rounds 35 minutes or the rectangular pan 40 minutes, until a skewer comes out clean. Cool in pans 10 minutes, then on racks until cold.
  5. Beat cream cheese, butter and vanilla until smooth. Beat in icing sugar. Frost between layers and on top (and sides if you like).

Tip: Bicarb plus pineapple is the lift — do not swap to baking powder. Do not bake in one deep round pan; it will not cook through. Drain the pineapple well or the crumb is heavy.

Notes

  • Shopping and mise en place: read the full ingredient list once before you start. For Carrot cake, can crushed pineapple and milk are the items that decide whether the dish tastes flat or properly seasoned. Weigh where grams are given — volume cups are fine for liquids and some dry goods, but baking ratios are tighter if you use scales. Australian cups are 250 ml; a tablespoon is 20 ml and a teaspoon is 5 ml.
  • From our tested tip, expanded: Bicarb plus pineapple is the lift — do not swap to baking powder. Do not bake in one deep round pan; it will not cook through. Drain the pineapple well or the crumb is heavy. Treat that as the non-negotiable. If something still feels off — too wet, too pale, too tight — adjust one variable at a time (heat, liquid, or bake time) rather than changing three things at once.
  • Before the heat goes on, line up can crushed pineapple, milk and white vinegar and anything perishable from the list. Soften butter, bring eggs off the fridge if the method needs them room-temp, and preheat so you are not waiting mid-recipe. For a baking cook of this size (12), a clear bench saves more time than any gadget.
  • Putting it together for Carrot cake: work clean, taste as you go, and do not rush browning or reduction steps if they appear in the method. If you are cooking for mixed diets, plate sauces and toppings separately where practical. Keep this page bookmarked if it becomes a household regular — we update wording when cooks report a confusing step. Metric consistency across Scoops & Dishes means once you trust the cups and scales here, breakfast through dessert behaves the same way.
